Three Fast and Easy Dinner Ideas

I am no chef, but I do enjoy spending time in the kitchen! Unfortunately, I'm the person who just pours things in and "eyeballs" it. So recipes aren't super existent in my house! The good news is, these recipes are so easy, you don't really need measurements! You can embellish as you so desire! These meals are particularly handy to have in your rotation because they're perfect for busy days!

Salsa Verde Shredded Pork

For this, grab your favorite Green Salsa! My personal favorite is Trader Joe's Salsa Verde! This recipe is great for leftovers too! Throw the meat in quesadillas or burritos the next day, or even make them with eggs for breakfast!

Throw a pork loin into the crock pot and put the whole jar of salsa in there! Add some garlic, salt, pepper, and BAM! If I want some extra heat, I'll add a small can of HOT diced Green Chilis. Cook on low for 8+ hours or 4 hours on high. So I'm still learning the #InstantPot and all its mechanics, so this may not be a direct conversion, but I put it on the "Meat" setting, High, for 15 Minutes and did the Fast Release!

Bonus Tip: Costco has a four pack of pork loins for $15, which is a STEAL!! Freeze the other 3 and you can throw them in the Instant Pot frozen even!


Taco Cornbread Skillet


For this you will need:

  • 1 Box of cornbread

  • 1/2 lb of Ground Beef

  • 1/2 Can of Beans (Pinto or Black, your preference)

  • 1/2 Can of Corn

  • Shredded Cheese (for Topping)

  • Your favorite Salsa

Make your cornbread according to the box instructions and put it in the oven for HALF the cooking time (about 7 min). I usually make this in a 9x9 pan. While its cooking, brown your ground beef with your salsa, salt, pepper, and garlic. Add the salsa to your preference, I like a lot in mine so the meat is really flavorful., Once the meat is browned, add in your beans and corn and mix well. Pour the beef mixture on top of the half baked cornbread and return to the oven for the remainder of the cooking time. (About 7 minutes) When you pull it out of the oven, sprinkle shredded cheese on top! Feel free to add salsa or sour cream on top! ¡OLÉ!

Shredded Buffalo Chicken

This is one of my favorite dishes because of how stinkin' easy it is! I always make this in my Instant Pot, but I'm sure it would be easy to do in the crock pot as well! Please don't let the name scare you away, its really not as spicy as it sounds!


You'll need:

  • 1-12oz Bottle of Buffalo Sauce (I Like Frank's Red Hot Buffalo Wing Sauce)

  • 1- 24oz Bottle of Ranch (any brand you like! I have used the Primal Kitchen Ranch as a dairy free option and it was just as yummy!)

  • 2 lbs of Chicken Breast

Okay! Everyone in the pot! HALF The bottle of Wing Sauce, HALF the bottle of Ranch, all the chicken, Salt and pepper. Set the #InstaPot to "Poultry" for 15 minutes on High. Let it natural release! If you don't have time, you can do the Quick Release too (either is fine!) Shred the chicken and stir well! I like to do a taste test at this point and see if it needs more of either sauce. If the chicken isn't very "shreddable" return to the pot for 5 minutes under high pressure! Serve on Burger buns with coleslaw! Or, on top of a baked sweet potato! It sounds crazy but I swear its delicious!!
